1 medium onion, diced
1 Tbsp. H-E-B Olive Oil
1/4 c. bacon bits
6 medium potatoes, peeled and diced - 1/2 inch
1 Tbsp. herbes de provence

1 ctn. (32 oz.) Central Market Organics Low Sodium Gluten-Free Chicken Broth
1/2 c. H-E-B Fat Free Half & Half
* H-E-B Shredded Low-Fat Cheddar Cheese
In a large pot, sauté onion in oil and cook until translucent. Add bacon bits and potatoes; stir to coat. Season with Herbes de Provence, salt, and pepper.
Add broth; bring to a boil. Reduce heat to Medium; simmer until potatoes are tender.
Using a potato masher, roughly mash the soup to desired consistency.
Finish the soup by stirring in half & half. Adjust seasoning.
Serve in bowls and garnish with shredded cheddar cheese.
