2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
1 tablespoon grated orange rind
2 tablespoons shortening
1 egg, well beaten
1/2 cup chopped walnuts or pecans
1 1/2 cup fresh or frozen cranberries, coarsely chopped
Preheat oven to 350 degrees.
Grease bottom only of 9 x 5 x 3-inch loaf pan.
In large bowl, mix together flour, sugar, baking powder, salt, and baking soda.
Stir in orange juice, orange rind, shortening, and egg.
Mix with electric mixer at medium speed until well blended.
Stir in nuts and cranberries.
Pour into greased pan.
Bake for 55 minutes or until toothpick inserted into center comes out clean.
Cool on rack 15 minutes before removing from pan.
