1 lemon, grated rind and juice
3/4 cups H-E-B Milk
1 cup sugar
3 cups (two 6 oz. pkgs.) Hill Country Fare Biscuit Mix
1 cup Ocean Spray Dried Cranberries
Preheat oven to 350°F. Spray a 12 cup muffin pan with non-stick cooking spray; set aside.
In a large mixing bowl combine lemon rind and juice, eggs, milk and sugar; stir to blend.
Add biscuit mix and dried cranberries. Pour batter into prepared muffin pan and bake on middle rack of oven for 15-20 minutes.
Remove from oven and turn muffins onto a clean surface.
