2 cups crushed baked corn chips or regular corn chips
1 cup shredded cheddar cheese
1/4 cup chopped bell pepper or 1 fresh jalapeno pepper, seeded and chopped
3 green onions, chopped
1/2 pound light, regular or chorizo pork sausage, cooked and fat drained
6 HEB eggs, beaten until frothy
Heat oven to 300°F. Spray a 11 x 7-inch baking dish with non-stick cooking spray, set aside.
Combine corn chips, cheese, chilies, onion, cooked sausage and eggs in prepared baking dish. Spread mixture evenly.
Bake on center rack for 20 minutes. Cut into squares and serve.
