chopped bell pepper or 1 fresh jalapeno pepper, seeded and chopped

light, regular or chorizo pork sausage, cooked and fat drained

HEB eggs, beaten until frothy
![]() Instructions ![]() Heat oven to 300°F. Spray a 11 x 7-inch baking dish with non-stick cooking spray, set aside.
![]() Combine corn chips, cheese, chilies, onion, cooked sausage and eggs in prepared baking dish. Spread mixture evenly.
![]() Bake on center rack for 20 minutes. Cut into squares and serve.
