1 slice H-E-B peppercorn bacon, uncooked
1 small onion, chopped (about 1 cup)
2 to 3 cloves garlic, peeled and chopped
1 large tomato chopped (about 1 1/2 cups)
1 (16-ounce) bag frozen Hill Country Fare cut okra
Chop bacon and cook in a large skillet over high heat for 5 minutes or until crisp.
Remove bacon and place on paper towels to drain and chop.
Reserve 1 tablespoon bacon fat in skillet.
Combine bacon fat and onions in skillet and stir-fry over high heat for 2 to 3 minutes until onions are golden.
Add garlic and stir-fry one minute.
Add tomato and okra to onion mixture and cook over high heat until liquid boils.
Reduce heat to medium and cook uncovered for 5 minutes or until okra is crisp tender.
Place okra in serving dish and top with chopped bacon
