2 lbs all-purpose potatoes, washed scrubbed & cut into 3/4 inch cubes
1 cup Hellmann's® Regular or Light Mayonnaise
2 Tbsp Hill Country Fare White or Cider Vinegar
1 tsp sugar
1/2 cup each: H-E-B H-E-B Ready, Fresh Go! Chopped Celery & Chopped Onion
2 hard boiled eggs peeled & chopped
1/4 cup Hill Country Fare Sweet Pickle or Dill Relish
Combine cubed potatoes and 4 cups of water (to cover) in a large cooking pot. Bring the potatoes to a boil over high heat. Reduce the heat to low and cook uncovered for 10 minutes or until potatoes are tender. Drain potatoes and cool for 5 minutes.
In a large bowl, combine the mayonnaise, vinegar and sugar.
Add the potatoes, chopped celery, onions, eggs and pickle relish. Toss the ingredients gently to combine and season to taste with salt and black pepper. Serve the potato salad chilled or at room temperature.
