1 package (8 oz) cream cheese
1/2 cup sugar
1 cup sour cream or heavy whipping cream
1 teaspoon vanilla
1 HCF graham cracker pie crust
Heat oven to 350 degrees.
Place cream cheese in a microwave-safe mixing bowl and heat in microwave on High power for 30 seconds to soften.
(You can also soften by cutting into small cubes and setting at room temperature for 10 minutes.
Add sugar to cream cheese and beat with mixer on medium speed for 30 seconds.
Quickly beat eggs, cream, and vanilla (for 30 more seconds, do not over beat.
Pour batter into pie crust and bake for 35 minutes (center will jiggle).
Turn off oven, open door slightly and let cheesecake cool in oven
