Ingredients

2  tsp.  olive oil

1/2  c.  carrots, cubed or julienne

1/2  c.  zucchini, cubed or julienne

1/2  c.  yellow squash, cubed or julienne

1  clove  garlic, minced

3  c.  cooked brown rice (cooked in low-soduim chicken broth)

1/4  tsp.  ground black pepper

1/4  tsp.  fresh rosemary leaves, minced or favorite herb

Instructions


Heat oil in large skillet over medium heat. Add carrots, zucchini, squash and garlic; cook until vegetables are tender crisp. Stir in rice, pepper and rosemary. Cook until thoroughly heated.
