6 ripe medium avocados
3 tablespoon white wine vinegar
1/2 cup olive oil
* salt to taste
1 red pepper, small dice
1 yellow pepper, small diced
1 green pepper, small dice
1/2 cucumber, small dice
3 cups mixed greens
Mix vinegar and oil together. Season with salt and pepper.
Peel and seed cucumber. Mix diced peppers and cucumber together.
Add 1/4 cup of dressing. Mix well. Dress greens with remainder of dressing.
Cut avocados in half, seed, peel and slice. Place greens on plate.Fan avocado slices in the center and sprinkle each plate with 3 tablespoons of the diced vegetable confetti.
