Ingredients

1  bunch  collard greens

2  slices  bacon

*  salt and ground black pepper

Instructions


Wash collard greens; trim and discard stems. Chop coarsely and set aside.

Cook bacon in a large skillet over Medium-High heat 5 minutes or until crisp. Remove bacon with a slotted spoon to a paper towel to drain. Discard all but 1 tablespoon bacon drippings from skillet.

Sauté onion in bacon drippings 5 minutes.

Gradually add collard greens, stirring frequently. Reduce heat to Medium, cover skillet and cook 5 minutes.

Crumble bacon, sprinkle over top and serve immediately.
