1  box (1 lb. 2 1/4 oz.)  Hill Country Fare White Cake Mix

3  egg whites

16  Central Market Organics Chocolate Truffles from France

*  Icing:

2 1/2  c.  H-E-B Powdered Sugar

1  Tbsp.  H-E-B Butter, room temperature

1  Tbsp.  H-E-B Lemon Honey

2  c.  Hill Country Fare Coconut for topping


Heat oven to 350°F. Line 2 cupcake pans with 16 foil or paper liners and set aside.

Prepare cake mix according to package directions using egg whites and olive oil. Fill each cupcake liner with 1/3 cup mix and drop 1 truffle in center of each.

Bake for 25 minutes (center will be soft because of truffles). Set aside to cool.

Combine sugar, 1/4 cup water, butter, and honey in small mixing bowl. Mix on low until sugar is moistened. Beat on high speed until icing is smooth and fluffy. Add extra water (1 teaspoon) if needed to reach proper consistency.

Spread 1 1/2 tablespoons icing on each cupcake. Place coconut in small bowl and press each iced cupcake into coconut.
