1 medium head (about 10 cups) romaine lettuce, torn into bite-size pieces
1 cup sliced red onion (about 1/2 small onion)
1/4 cup Parmesan cheese
1 cup H-E-B Two Cheese Creamy Caesar Salad Dressing
1 cup croutons
1 cup chopped hard boiled eggs (3 to 4)
1 (2 oz) can flat fillets of anchovies (optional)
Place the lettuce, onion, and Parmesan cheese in a large serving bowl. Right before serving, toss with salad dressing and croutons.
Top with eggs and garnish with anchovies, if desired. Serve immediately.
