2  Tbsp.  canola oil

*  salt and pepper to taste

4  (6 oz.) boneless skinless chicken breasts

1  c.  cherry tomatoes, halved

1  can (6 oz.) H-E-B Quartered Artichoke Hearts In Water, drained

1/2  c.  Central Market Low-Sodium Chicken Broth

2  Tbsp.  chopped parsley

1  c.  H-E-B Shredded Parmesan Cheese

1  lemon, zest only


Preheat large saut&eactue; pan to Medium-High. Add canola oil. Salt and pepper chicken, place in hot pan, and saut&eactue; 5 minutes on each side until deep brown.

Add tomatoes and drained artichoke hearts. Cook 2 minutes, add broth and simmer an additional 3 minutes. Add parsley, remove from heat, and top with Parmesan and lemon zest.
