4 to 6boneless, skinless chicken breast halves
1poundfrozen mixed vegetables
1/2cupapricot or peach H-E-B More Fruit or Jam
Mix oil, paprika, lemon juice and chicken, stirring gently.
Heat a large nonstick skillet 1 minute over a medium high heat, then place chicken in skillet, cover.
Cook 3 minutes.
Cook Rotini according to package directions.
Turn chicken over.
Spoon vegetables in spaces between chicken pieces.
Mix orange juice, cornstarch, salt and pepper; pour over vegetables.
Spoon jam evenly over top of chicken.
Bring to a boil, cover and simmer 7 minutes.
Drain Rotini and pour onto serving platter.
Place chicken on top, then pour over.
