Cilantro Lime Chicken

2 1/2   Tbsp.  fresh lime juice

1 1/2   Tbsp.  olive oil

1/4   tsp.  salt

4   (6 oz.)  boneless skinless chicken breast

*  non-stick cooking spray

1  avocado, diced

1  Tbsp.  minced fresh cilantro

2   Tbsp.  H-E-B mild salsa

1   c.  garlic


Combine lime juice, olive oil, and salt in a large bowl. Add chicken, turn to coat and let stand 3 minutes. Remove chicken and discard marinade. Shake off any extra marinade in the chicken.

Place a grill pan over Medium-High heat. Coat pan with cooking spray, add chicken and cook 6 minutes on each side or until done.

Top chicken with avocado, jalapeno, cilantro, and salsa.
