4 H-E-B cilantro lime chicken breasts, grilled and thin sliced
1 16 ounce can ruby grapefruit sections or 1 cup fresh ruby grapefruit sections, drained
2 H-E-B Fresher Lasting jumbo avocado halves, sliced
1 10 ounce bag baby spinach
1/2 small red onion, sliced and rings separated
1/2 cup blush or vinaigrette, regular or fat free
Grill or pan fry H-E-B cilantro lime chicken breast according to package directions. Thin slice the cooked chicken and set aside.
Layer the sliced chicken, grapefruit sections, avocado slices, baby spinach and red onion in a large salad bowl. Cover salad with plastic wrap and refrigerate until ready to serve.
Serve salad with blush or vinaigrette salad dressing.
