1 tbsp. canola oil
1/2 cup chopped green onions (4 onions)
1 cup 2 large carrots, peeled and thinly sliced
2 cups 1 large potato, peeled and cut into 1/2 inch cubes
2 cans (14 1/2 oz) chicken broth
1 container (16 oz) HEB Chunky Chicken Breast with BBQ Sauce
Heat oil in a large cooking pot over medium heat.
Add green onion and cook for 2-3 minutes or until golden brown.
Add carrots, potatoes and chicken broth; stir to combine.
Bring vegetable-soup mixture to a boil.
Cover and reduce heat to medium-low heat.
Cook for 10 minutes or until vegetables are tender.
Add chunky chicken breast and stir to combine.
Heat uncovered for 2 more minutes and serve.
Season to taste with black pepper, salt and a squeeze of lime.
Add-on toppings: chopped cilantro, shredded cheese, chopped tomato or crushed corn chips
