1  cup  Bakers scoop all purpose flour

1/4  teaspoon  salt

3  cups  H-E-B Eggnog, regular or light

1  can  Hill Country Fare Butter Flavor Spray

2  tablespoons  H-E-B Butter

2  bags (16 oz each)  H-E-B Frozen Berry Medley

1/4  teaspoon  Ground Nutmeg

2  tablespoons  H-E-B Brown Sugar

2  packages  Softened H-E-B Cream Cheese, regular or fat free


Combine the flour and salt in a mixing bowl. Add the eggnog and mix to remove any lumps. You can prepare this batter the day before, cover and refrigerate.

Heat a skillet over medium low heat for 1 minute. Add the melted butter and brown sugar for 1 minute. Add the thawed fruit and nutmeg and cook for 2 minutes. Keep this mixture warm.

Heat a large skillet over medium heat for 2 minutes. Spray the griddle with non-stick cooking spray and pour 1/2 cup of the thin batter in the skillet. Tilt the pan so that the batter spreads out thinly. Cook until bottom is golden, turn and cook other side. Prepare 10 crepes, stack and keep warm.

Spread 2 Tablespoons cream cheese in each crepe and spoon 1/4 cup warm fruit down the center. You can fold the crepe over in half or roll like a taco. Serve each crepe with an additional 2 Tablespoons of warm fruit.
