1 can (29 oz.) cut sweet potatoes, drained
1 c. H-E-B Frozen Pineapple Chunks
1 Tbsp. chipotle pepper in adobo sauce, seeded & chopped
3 Tbsp. each: H-E-B Butter and Brown Sugar
2 Tbsp. Central Market Organics Raisins
2 Tbsp. fresh parsley or cilantro, chopped
Heat oven to 400°F. Spray a 9 X 13-inch baking dish; set aside.
Combine sweet potatoes, pineapple, chipotle pepper in adobo sauce, butter and brown sugar in a processor or blender bowl. Process sweet potato mixture for 10 to 15 seconds to a chunky texture. Pour into prepared baking dish. Stir in raisins.
Bake Chipotle and Raisins Mashed Sweet Potatoes on center oven rack for 15 minutes or until piping hot and bubbly. Remove from oven and sprinkle with chopped parsley or cilantro.
