1 (40 ounce) can Sugary Sam Golden Cut Sweet Potatoes, drained OR
2 1/2 - 3 1/2 pounds sweet potatoes, cooked & peeled
1 (20 ounce) can Hill Country Fare Pineapple Chunks, drained
1 teaspoon (or up to 1 tablespoon) San Marcos Chipotle Salsa
3 tablespoons H-E-B Butter
3 tablespoons H-E-B Brown Sugar
1/3 cup Mariana Sweetened Dried Cranberries
1/4 cup fresh parsley or cilantro
Heat oven to 400 degrees F. Spray a 9 X 13-inch microwave safe baking dish; set aside.
Combine sweet potatoes, pineapple, chipotle salsa, butter, and brown sugar in a processor or blender bowl. Process sweet potato mixture for 10 to 15 seconds to a chunky texture. Pour sweet potato mixture into prepared microwave safe baking dish. Stir in the dried cranberries. Cover the sweet potatoes with a paper towel and microwave on High power for 6 minutes
