2 seedless cucumbers, unpeeled
1/2 cup finely chopped yellow, red or orange bell pepper
2 tablespoons minced Italian flat-leaf parsley
2 large ripe tomatoes, thinly sliced
1/4 cup sour cream
1 tablespoon mayonnaise
2 teaspoons white wine vinegar
* salt and pepper, to taste
Trim and discard ends from cucumbers. Slice cucumbers very thinly on the slicing edge of a food grater. Chop bell pepper finely. Mince parsley.
Combine dressing ingredients in a medium bowl. Toss cucumbers, bell pepper and parsley with dressing. Chill until ready to serve.
Right before serving, slice tomatoes. Arrange lettuce leaves on a platter or on individual plates; lay tomato slices over lettuce. Top with cold cucumber salad mixture and serve immediately.
