1 lb. Tierra Linda Mayo Coba Beans
1 Tbsp. vegetable oil
3 cloves garlic
1 onion, chopped
1 ½ lb. lean ground beef
3 cans (14 ½ oz.) tomatoes seasoned for chili
Cook beans according to package instructions. Drain beans, reserving the broth for later use.
In the same cooking pot, heat oil over medium-high heat for 2 minutes. Add garlic and onion. Cook for 2-3 minutes or until onion is tender.
Add ground beef and cook until beef is crisp and browned. Add tomatoes seasoned for chili and stir to combine. For spicier chili, add 1 tablespoon chili powder. Bring mixture to a boil, cover and reduce heat to medium low. Cook for 1 1/2 hours adding reserve broth if necessary. Stir in cooked beans and heat thoroughly.
