Chicken with Citrus Cilantro Rice

Ingredients

1  Tbsp.  olive oil

1  lb.  boneless skinless chicken breast, cut into cubes

1/2  tsp.  salt

1  tsp.  black pepper

1/2  onion, rough chopped

2  cloves garlic, chopped

1  c.  brown rice

1/2  c.  cilantro, chopped

1  lime, juice & zest

Instructions


Heat a large pot over Medium-High. Add oil and tilt to coat pan.

Season chicken generously with salt and pepper, add to hot pan, and brown on all sides. Remove from pan and set aside.

To the same skillet, add onions, garlic, and rice. Cook 4 to 5 minutes, stirring constantly.

Add chicken back to the pan along with 2 cups water. Bring to a simmer and cover. Reduce heat to Low and cook 35 minutes.

Remove from heat, stir in cilantro, lime juice, and zest. Serve immediately.
