Chicken & Pasta Mediterranean

12  ounces  frozen H-E-B Fully Cooked breaded chicken breast chunks (1/2 bag)

12  ounces  uncooked orecchiette pasta ( 2 cups)

2  tablespoons  olive oil

1  tablespoon  fresh lemon juice

1/4  teaspoon  coarse ground black pepper

1  tomato, diced

1/2  cup  chopped green onions, including tops

1/4  cup  chopped kalamata olives

1/2  cup  H-E-B shredded Romano cheese


Bring 3 quarts water to a boil in a 5-quart pot. Cook pasta in boiling water according to package directions. Drain well.

Meanwhile, heat chicken in microwave according to package directions. Cut chicken chunks into quarters; set aside and cover to keep warm.

Dice tomato. Chop green onions with tops. Chop olives.

Whisk oil, lemon juice and pepper together in a large serving bowl. Add hot, drained pasta and toss to coat. Add chicken chunks, tomato, green onions, olives and cheese. Toss to combine and serve warm
