20 to 25 minutes
1 large onion, chopped
1 Tbsp. H-E-B Butter
1 1/4 cups chicken broth
1 cup salsa, hot or mild
1 cup uncooked rice
1/8 teaspoon garlic powder
4 boneless chicken breasts
1 can (15 oz.) black beans, rinsed
3/4 cup shredded cheddar cheese
Sauté onion in butter. Add broth and salsa and bring to a boil. Stir in rice and garlic powder. Place chicken over rice, cover and simmer for 10 minutes. Turn chicken and cook for 10 to 15 minutes more.
Remove from heat,add drained black beans, sprinkle with cheese,cover and let stand 5 minutes to melt cheese.
