*  nonstick cooking spray

1  1  onion, finely chopped

1   large  yellow bell pepper, finely chopped

1   small   eggplant, finely chopped

3   cloves  garlic, minced

1/4   tsp.  freshly ground black pepper

1/4   c.  fat-free, low sodium chicken broth

1   jar (4 oz.)  diced pimiento, drained

2  2  H-E-B Fully Cooked Italian-Seasoned, chopped cooked chicken breasts


Place a large nonstick skillet coated with cooking spray over Medium-High heat.

Add onions, bell pepper, eggplant, garlic, and pepper. Saute 8 minutes or until vegetables are tender.

Add chicken broth and cook 1 minute.

Remove from heat; stir in pimiento and chicken.
