1box (5.25 oz.)Hill Country Fare Scalloped Potatoes
1can(10 oz) chunk white chicken, drained and chopped
1box(10 oz) frozen peas and carrots or cut green beans
1jalapeno pepper, seeded and finely chopped (optional)
Heat oven to 400°F. Spray a 2-quart baking dish with non-stick cooking spray.
Combine 2 cups boiling water, butter or margarine and milk in a saucepan. Stir in cheese sauce mix. Add potatoes, chicken, peas and carrots or green beans and jalapeno pepper; stir to combine.
Pour potato mixture into prepared baking dish. Bake uncovered for 35 minutes or until potatoes are tender.
You can substitute 1 can (14.5 oz) of Veri Green Cut Beans or Veri Young Tender Peas for the peas and carrots.
