2 tbsp. butter or margarine
3/4 cup milk (whole, reduced fat or fat free)
1 box (5.25 oz.) Hill Country Fare Scalloped Potatoes
1 can (10 oz) chunk white chicken, drained and chopped
1 box (10 oz) frozen peas and carrots or cut green beans
1 jalapeno pepper, seeded and finely chopped (optional)
Heat oven to 400°F. Spray a 2-quart baking dish with non-stick cooking spray.
Combine 2 cups boiling water, butter or margarine and milk in a saucepan. Stir in cheese sauce mix. Add potatoes, chicken, peas and carrots or green beans and jalapeno pepper; stir to combine.
Pour potato mixture into prepared baking dish. Bake uncovered for 35 minutes or until potatoes are tender.
You can substitute 1 can (14.5 oz) of Veri Green Cut Beans or Veri Young Tender Peas for the peas and carrots.
