1  lb.  chicken breast for Milanesa, cut 1/4-inch thick

1  loaf  ciabatta bread or 4 ciabatta rolls

2  tbsps.  Hill Country Fare Canola Oil

1/4  cup  Progresso Garlic & Herb Bread Crumbs

1/4  cup  grated Parmesan cheese

1  red bell pepper, seeds and stem removed

2  tbsps.  chopped pitted kalamata olives

1  (.05 oz.) pkt.  Knorr's® Pesto Sauce'

1/2  cup  reduced-fat mayonnaise

2  tbsps.  olive oil


Heat oven to Broil. Split ciabatta loaf or rolls horizontally. Combine breadcrumbs and Parmesan on a plate. Beat egg in a separate bowl.

Dip chicken in egg, then turn in crumb mixture to coat both sides.

Heat oil in a large skillet over Medium-High heat 3 minutes. Cook chicken 1 to 1 1/2 minutes per side. Remove to drain on paper towels.

Cut pepper into thin strips. Chop olives. Combine sandwich spread ingredients.

Place bread under broiler 1 to 2 minutes per side or until lightly toasted. For loaf, cut crosswise into 4 portions. Spread pesto mixture over cut sides of bread. Place bell pepper strips, olives and chicken between bread. Serve immediately
