1 tsp. H-E-B Canola Oil
1 lb. ground chicken
1/4 c. onion, chopped
1 c. H-E-B Ready, Fresh, Go! Spinach, chopped
1 celery stalk, chopped
2 c. grapes, sliced in halves
1 medium apple, chopped
1/3 c. low-fat mayonaise
• salt & pepper

Heat a heavy bottom skillet over medium high heat 3 minutes. Add oil and ground chicken. Cook 15 minutes or until internal temperature is 165°F. Set aside and let cool.
Meanwhile, combine onion, spinach, celery, grapes, apple and mayonnaise in large serving bowl. Stir in cooked chicken and season to taste with salt and pepper.
Serve on a whole wheat bun.
