1 tablespoon sesame seeds
2 tablespoons semi-sweet chocolate
2 (14.5 oz.) cans chicken broth
1 (8.25 oz.) jar Rogelio Bueno Mole
1 tablespoon canola oil
2 lbs. chicken breasts and/or leg quarters
Heat oven to 350 degrees. Line a large baking pan with foil.
Season chicken parts with salt and pepper to taste. Arrange chicken on foil lined pan. Bake chicken for 45 minutes until internal juices run clear.
Meanwhile, heat a large skillet over medium heat for 2 minutes. Add oil and mole, stirring constantly until smooth. Add chicken broth to mole and stir until mole is dissolved. Bring mixture to a boil, reduce heat to medium low, cover skillet and cook for 60 minutes, stirring occasionally.
Once mole has cooked for 60 minutes, add chocolate and stir until chocolate is dissolved.
Place baked chicken on a large platter and top with mole sauce. Sprinkle chicken mole with sesame seeds and serve.
