1 pound H-E-B Fajita Seasoned Chicken Breasts, thin sliced
1 1/2 cups H-E-B Long Grain Rice
1 cup H-E-B Salsa Picante, any flavor
1 can (15 ounces) Hill Country Fare Chicken Broth
1 avocado, peeled and sliced
* juice of one lime
Heat a large skillet over high heat for 3 minutes. Add the chicken fajita strips and stir-fry for 3 to 4 minutes. Add rice and stir-fry rice for 4 minutes or until rice is golden.
Add salsa and chicken broth to chicken rice mixture and bring to a boil. Cover, reduce heat to Medium-Low and cook for 20 to 25 minutes or until rice is fluffy.
Toss avocado slices with juice of lime. Top chicken fajita rice dish with avocado slices and serve.
