1/2 lb. boneless, skinless chicken breasts
1/4 tsp. salt
8 wooden skewers, cut to fit grill pan
1 pt. grape tomatoes
8 H-E-B Fresh Mozzarella Ciliegine, halved
4 fresh basil leaves, halved
Soak skewers in water 30 minutes.
Bring large non-stick grill pan to Medium-Low heat. Season chicken with salt and cook 5 minutes on each side.
When chicken is done, remove from pan and dice each breast into 8 bite-sized pieces. Meanwhile, bring grill pan to Medium-High heat.
Skewer 1 tomato, 1/2 mozzarella ball, 1/2 basil leaf, 1 tomato, and 1 piece of chicken onto a wooden skewer. Repeat one more time on same skewer. Do this for all 8 skewers.
Briefly sear skewers on grill pan about 30 seconds on one side. Flip and sear another 30 seconds. Enjoy skewers hot or chilled after 30 minutes.
