1 pound Chicken Tenders, cut into 1-inch pieces
2 links Andouille sausage, cut into 1/2-inch slices
1 small onion, coarsely chopped
1 green bell pepper, coarsely chopped
2 tablespoons olive oil
1 box Zatarain's Red Beans and Rice mix
Chop chicken, sausage, onion and bell pepper.
Heat oil in a large deep non-stick skillet over Medium-High heat.
Add onion and pepper and saute 2 minutes.
Add chicken; sauté 3 minutes.
Add sausage; sauté 2 minutes.
Stir red beans and rice mix and 3 1/4 cups water into chicken and sausage mixture.
Bring to a boil.
Reduce heat to Medium-Low and simmer, uncovered, 25 minutes
