1 box (18.25 oz.) Hill Country Fare Devil's Food Cake Mix
3 Large Eggs
1/2 cup H-E-B More Fruit Cherry Blueberry Spread
1 can (12 oz.) Hill Country Fare Cola
1 jar (4 oz.) H-E-B Harvest Moon™ Maraschino Cherries, drained
1 container (16 oz.) Hill Country Fare Chocolate Fudge Icing
Heat oven to 350°F. Heavily spray two 8-inch cake pans with non-stick cooking spray or grease with softened margarine and dust with flour; shake out excess.
Combine cake mix, eggs, cherry blueberry spread and Hill Country Fare Cola in a large mixing bowl. Mix for 2 minutes on medium speed with an electric mixer. Divide cake batter evenly into the two prepared cake pans. Bake the cakes on the center oven rack for 35 minutes or until cake is done. Cool cakes completely in pans on cake rack before removing from pans.
Chop 1/3 cup of cherries and set aside. Save remaining whole cherries for decoration.
Place one cake round on plate and spread chocolate fudge icing on top of the cake and sprinkle with chopped cherries. Place second layer on top of the first layer and spread the chocolate fudge icing on the sides and top of cake. Top the cake with the whole cherries.
