1 box (18 oz.) Hill Country Fare yellow cake mix
2 large H-E-B eggs
1 can (21 oz.) Lucky leaf cherry pie filling or your favorite flavor
1/4 cup H-E-B butter or margarine
1/2 cup Sifted H-E-B powdered sugar
Heat oven to 350F. Spray a 13 x 9 inch baking pan with non-stick cooking spray and set aside.
Stir together 11/2 cups of yellow cake mix, 2/3 cup WATER and eggs in a mixing bowl.
Spoon the mixture into the prepared baking pan. Top the batter with the cherry filling and set aside.
Combine the butter and remaining cake mix in a bowl and mix with an electric mixer for 1 minute on low speed until the mixture is crumbly. Sprinkle the crumbly topping over the cherry filling. Bake the coffee cake on the center oven rack for 40 minutes oruntil golden. Cool.
Glaze: Combine the powdered sugar and 1 Tablespoon WATER in a small bowl and drizzle over the cake. Cut the cake into 15 squares
