Cheesy Scalloped Potatoes

Ingredients

4  medium baking potatoes (about 2 pounds)

2  tablespoons  flour

1  cup  H-E-B shredded Colby Jack cheese

2/3  cup  grated parmesan cheese

4  tablespoons  butter (1/2 stick)

1 1/2  cups  half and half cream

Instructions


Heat oven to 350 degrees. Spray a 9 x 13-inch baking dish with non-stick spray.

Peel potatoes, then slice very thinly into 1/8-inch thick slices; use the slicing disk of a food processor or a sharp knife.

Layer half the potato slices in baking dish. Sprinkle salt, pepper and 1 tablespoon flour over potatoes, then 1/2 cup Colby jack and 1/3 cup Parmesan cheese. Dot with half the butter.

Repeat step 3 to make a second layer. Pour half and half cream evenly over casserole.

Bake 1 hour or until bubbly and crusty on top. Let stand 5 to 10 minutes before serving. Cut into squares and serve while hot.
