1½  container  (16 oz. each) H-E-B Champagne Sweet Tomatoes

2  Tbsp.  chopped fresh oregano leaves

4  H-E-B Ready, Fresh, Go!® Garlic Cloves, chopped

½   c.  Hill Country Fare Italian Seasoned Bread Crumbs

*  Salt and fresh cracked pepper

3  Tbsp.  H-E-B Extra Virgin Olive Oil

2  Tbsp.  fresh chopped parsley (garnish)


Heat oven to 400°F. Spray a 9-inch deep-dish pie pan with nonstick olive oil spray and set aside.

Cut tomatoes in half crosswise and set aside. Combine chopped oregano, garlic, and bread crumbs in a bowl and set aside.

Arrange half of the tomatoes in the prepared baking dish, cut side up, and sprinkle with bread-crumb mixture. Season to taste with salt and fresh cracked black pepper. Arrange remaining tomatoes, cut side down, over bread crumb mixture. Drizzle olive oil over tomatoes.

Roast tomatoes on center oven rack for 30 minutes or until bubbly and golden. Garnish with chopped parsley and serve hot or warm.
