1 cup H-E-B Select Frozen Artichokes
1/2 bag H-E-B Select Frozen Asparagus, cut into 2 inch pieces
1 pound Red or Gold Potatoes, quartered and steamed
1/4 cup H-E-B Extra Virgin Olive Oil
2 cloves H-E-B Ready Fresh Go Garlic Cloves, Chopped
1 cup H-E-B Select Thin Green Beans
Place the potato quarters in a microwave-safe bowl and add 1/4 cup water. Cover the bowl with plastic wrap and microwave on High power for 6 minutes and drain.
Combine the steamed potatoes, cut asparagus, green beans, chopped garlic and olive oil in a large bowl. Season the mixture with salt and fresh cracked black pepper.
Place the vegetable mixture in a 13 x 9 inch baking dish and roast the vegetable in the oven with the Cedar Plank Salmon (400 degrees F for 20 minutes).
