Catfish with Cheese Grits & Green Beans

4  Catfish or basa fillets

1  cup  Lowfat buttermilk

3  Slices whole wheat bread processed into medium fine crumb

1  Tbsp.  Seasoning blend

3/4  cup  small pecan pieces

2  Tbsp.  Shortening as needed

Cheese Grits:

2  cups  water

2  cups  Grits

1 1/2  tsp.  Seasoning salt

1/2  cup  Shredded cheddar cheese


Cheese grits: Bring water to boil, add grits and reduce to low.

Simmer for 2 - 3 minutes. Stir in seasoning and cheese. Remove from heat.

Fish: Place fish fillets in a large bowl and cover with buttermilk. Set aside.

Combine breadcrumbs, seasoning and pecan pieces in a shallow pan. Set aside.

Melt 2 tablespoons of shortening in a large skillet over medium high heat.

Bread fish in crumb mixture and pan sauté until golden brown on each side.

Green beans: Follow microwave instructions on cooking green beans. For additional flavor pan sauté cooked beans in a small amount of olive oil with crumbed bacon and diced onions.
