1 pound boneless, skinless chicken breast tenders, cut into 1-inch cubes
1 tablespoon cornstarch
1/4 teaspoon Morton & Bassett Coarse Ground Black Pepper
1 tablespoon Hill Country Fare Vegetable Oil
1 cup Oni™ Moondance Marinade
6 garlic cloves
1 red bell pepper
8 sliced green onions, white & green parts separated
3/4 cup raw cashews, toasted
In a medium bowl, toss chicken with cornstarch until chicken is coated. Then season with pepper.
In a large nonstick skillet, heat oil over Medium heat. Cook the chicken, until browned, turn as needed for about 7 minutes. Transfer to a plate.
Add to skillet garlic, red bell pepper, and white parts of the onions. Cook for about 2 minutes. Return the chicken to the pan and stir ingredients together.
Add marinade and cook, tossing until chicken is cooked through, about 1 minute. Remove from heat. Stir in green parts of the onions and cashews.
Serve immediately over white rice, if desired.
