1 1/2  lb.  carrots, cut into thick slices

3/4  c.  brown sugar

1  can  yams, drained

1/2  stick  margarine

1  can  pineapple chunks

1  bag  prunes


Cook carrots until tender in boiling water with the brown sugar and margarine. Do not drain.

Transfer to a bowl; add yams, un-drained pineapple chunks and prunes.

Taste for sweetness and add more brown sugar if you like it sweet.

Mix well and pour into a casserole dish and bake for 45 minutes or until most liquid has evaporated, but you do not want it completely dry.

You may top with a small amount of cream when serving.
