1 bag (16 oz) frozen HCF sliced crinkle carrots, thawed
1 can (8 oz) pineapple chunks
2 tbsp. chopped fresh cilantro
1/4 cup chopped red onion
1 tbsp. chopped fresh jalapeno pepper
1 juice of one fresh lime
* salt and cracked pepper, to taste
Combine all ingredients in a medium-size bowl and season to taste with salt and pepper.
Cover tightly and refrigerate for 6 hours or overnight.
