16 Bunny Eggs
8 hard-cooked H-E-B Eggs
1 tablespoon H-E-B Mayonnaise
1 tablespoon Hill Country Fare Mustard
1 tablespoon chopped parsley
2 tablespoons Hill Country Fare Pickle Relish
2 Hill Country Fare Pimiento-Stuffed Green Olives, sliced into circles
1/4 cup carrot matchsticks, for bunny whiskers
1/4 red bell pepper triangles, for bunny ears
Peel hard-cooked eggs and slice into halves. Place egg white halves on a plate and set aside.
Combine the hard-cooked egg yolks, mayonnaise, mustard, parsley and pickle relish in a small bowl. Mash and stir egg-yolk mixture with a fork or electric mixer. Season to taste with salt and pepper.
Place egg-yolk mixture in a zippered bag and snip off a 1/2-inch hole from the corner of the bag. Evenly squeeze the mixture into the 16 egg-white halves. Decorate eggs with olive slices for eyes, carrot matchsticks for whiskers, and red bell pepper triangles for ears
