1 Tbsp. canola oil
* salt and pepper
2 Tbsp. ground cumin
1 1/2 lbs. pork loin
2 large carrots, chopped
1 large onion, chopped
2 large potatoes, quartered
2 sprigs rosemary
2 Tbsp. chopped garlic
1 c. Central Market Organics Low Sodium Chicken Broth
Mix oil with salt, pepper, and cumin. Add pork and turn to coat. Heat a large pan to Medium-High. Add pork and cook 15 minutes, turning often. Once seared, place pork in a slow cooker.
Add carrots, onions, potatoes, rosemary, and garlic to same hot pan used for the pork and sauté 10 minutes.
Pour potato mixture over pork and add chicken broth. Cover slow cooker, turn heat to Low, and cook 8 hours.
