2  slices raw  H-E-B Peppercorn Bacon, cut in thirds

6  jalapeño peppers, seeded if desired

1  sweet yellow onion, cut into 6 wedges

3  roma tomatoes, each cut in half

6  metal or soaked bamboo skewers

3  cans (15.5 oz. each)  Central Market Pinto Beans, drained & rinsed

2  tsp.  H-E-B Texas Originals Borracho Bean Seasoning

1/2  can  light Texas beer

2  qt.  Cocinaware Skillet

1/2  c.  cilantro, chopped


Prepare charcoal or gas grill for cooking (375°F) or heat skillet. Spray a vegetable or mesh grilling rack with no-stick cooking spray and set aside.

Wrap bacon around each jalapeño pepper. Thread one onion wedge, tomato half, and bacon wrapped jalapeño on 6 metal or soaked bamboo skewers, set aside.

Combine beans, seasoning and 1/2 beer in skillet. Heat on grill until beans are heated and liquid is reduced by half. While beans are cooking, grill skewers on grilling mesh 8 minutes or until bacon is fully cooked.

To serve: spoon 1/2 cup of seasoned beans in each serving bowl. Top with grilled jalapeño, onion, tomato and cilantro.
