Blueberry Sour Cream Muffins

Ingredients

4  eggs

2  cups  sugar

1  cup  vegetable oil

1  teaspoon  vanilla

4  cups  flour

2  teaspoon  baking powder

1  teaspoon  baking soda

1  teaspoon  salt

2  cups  16-oz sour cream

2  cups  fresh blueberries

Instructions


Preheat oven to 400 degrees.

Oil 24 muffin cups.

Beat eggs in a medium bowl, add sugar gradually while continuing to beat.

Pour oil in slowly while beating.

Add vanilla.

Combine dry ingredients.

Add alternately with sour cream to egg mixture.

Gently fold in blueberries.

Spoon into prepared muffin cups.

Bake 20 minutes
