6 servings (3 large muffins)
* no-stick cooking spray
¼ c. H-E-B brown sugar
1 egg, beaten
⅓ c. H-E-B light vanilla yougurt
1 Tbs. H-E-B light olive oil
1 c. Hill Country Fare all-purpose baking mix
1 tsp. Hill Country Fare ground cinnamon
1 c. H-E-B frozen blueberries, thawed
Spray 3 microwave-safe coffee mugs with no-stick cooking spray, and set aside.
Combine brown sugar, beaten egg, yogurt, and olive oil in mixing bowl and stir until blended. Add all-purpose baking mix and cinnamon and stir quickly to moisten (batter will be lumpy). Gently stir in blueberries.
Fill each prepared coff ee mug with ½ cup batter. Microwave each mug for 90 seconds or until a toothpick inserted in the center comes out clean. CAUTION: MUG WILL BE HOT!
Let cool. Serve in or out of the mug.
