Blackened Chicken with Edamame Succotash

1  Tbsp.  canola oil

2  Tbsp.  blackening seasoning

4  (4 oz.)  boneless skinless chicken breasts

2  Tbsp.  butter

1  c.  frozen edamame, shelled

1  c.  frozen corn

1  bell pepper,diced

1/2  onion, chopped

*  salt & pepper, to taste


Preheat oven to 400°F.

Heat a large heavy bottom or cast iron skillet on High. Add canola oil and heat until almost smoking.

Sprinkle blackening seasoning on chicken and sear 1 minute per side. Place on a foil-lined sheet pan and roast in oven 7-8 minutes, until center is no longer pink and juices run clear.

Meanwhile, carefully rinse out skillet and dry. Reduce heat to Medium, melt butter, and then add vegetables. Saute until onions, and are translucent and vegetables are cooked through. Season with salt and pepper.

To serve, top chicken with succotash.
