6 farm-raised catfish fillets
1 cup (2 sticks) unsalted butter, melted
2 tablespoon sweet paprika
2 1/2 teaspoon teaspoons salt
1 teaspoon onion powder
1 1/2 teaspoon garlic powder
1 1/2 teaspoon cayenne pepper
2 teaspoon lemon pepper marinade
1 teaspoon ground thyme
1 1/2 teaspoon basil
Heat a large cast iron skillet over High heat until a drop of water sizzles in the pan(usually takes about ten minutes).
In a small bowl, combine paprika, salt, onion powder, garlic powder, cayenne pepper, lemon pepper marinade, thyme, and basil. Keep fillets refrigerated until ready to use. Dip each fillet in the melted butter, so that both sides are well coated. Sprinkle seasoning mix on both sides. Use 1 tablespoon of seasoning mix per fillet, patting in by hand. Place seasoned fillet on wax paper while preparing others.
Place three in hot skillet. Drizzle each with one tablespoon melted butter. There will be a lot of smoke, so kitchen should be well ventilated. Cook quickly, about two minutes per side. Remove to a warm platter.
Repeat process with remaining fillets. Serve immediately with lemon wedges.
