Blackberry White Chocolate Treat

4  c.  fresh blackberries

¼  c. plus 3 Tbsp.  H-E-B Sugar

1  tsp.  H-E-B The Baker’s Scoop Double Vanilla Extract

1  c. very cold  H-E-B Heavy Whipping Cream

½  c.  white chocolate chips

*  mint leaves for garnish


Combine berries, ¼ cup sugar, and vanilla in a large bowl and toss well to coat. Cover with plastic wrap and set aside at room temperature for 30 minutes. Place half of berries in a food processor and puree them. Strain mixture to remove seeds, then set aside.

Combine whipping cream and 3 tablespoons sugar in a large mixer bowl. Beat with an electric mixer on medium high speed for 1½ minutes or until stiff peaks form; set aside.

Melt white chocolate chips in a double boiler and fold into pureed berries. Fold whipped cream into mixture, cover with plastic wrap, and chill for 1 hour.

Scoop 3 tablespoons of berry cream mixture into a dish, then top with 3 whole blackberries.
